  1. Yield: about 3 dozen squares

  2. 1 can (5 ounces) evaporated milk

  3. 1-2/3 cups sugar

  4. 1/2 teaspoon salt

  5. 2-1/2 cups miniature marshmallows,divided

  6. 1-1/2 cups (9 ounces) semisweet chocolate chips

  7. 1 cup peanuts, divided

  8. 1 teaspoon vanilla extract

  9. 8" square baking dish with nonstick cooking spray. In a large saucepan, combine the evaporated milk, sugar, and salt over low heat. Bring to a boil and allow to boil for 5 minutes, stirring constantly.

  10. 2 cups marshmallows, the chocolate chips,

  11. 3/4 cup peanuts, and the vanilla, stirring until the marshmallows and chocolate chips are melted. Pour into the baking dish. Top with the remaining

  12. 1/2 cup marshmallows and 1/4 cup peanuts, gently pushing them into the fudge.

  13. Allow to cool until firm, then cut into 1" squares. Serve, or store in an airtight container until ready to serve.
