  1. 1 (16 ounce) can pinto beans, drained

  2. 3 eggs, beaten

  3. 3/4 cup white sugar

  4. 2 teaspoons vanilla extract

  5. 1 pinch salt

  6. 1 (9 inch) unbaked pie shell

  1. Preheat oven to 350 degrees F (175 degrees C). Place pie shell in a 9 inch pie pan.

  2. In a food processor, puree beans until smooth. In a medium bowl, combine beans, eggs, sugar, vanilla and salt; beat well. Pour mixture into the unbaked pie shell.

  3. Bake for 45 minutes or until knife inserted into center of pie comes out clean. Cool before serving.
