  1. 1 carrot , shredded

  2. 1/4 cup chopped onion s

  3. 1/4 cup butter or margarine

  4. 1/4 cup flour

  5. 2-1/2 cups milk

  6. 2 cups shredded CRACKER BARREL Sharp Cheddar Cheese

  7. 1/2 cup beer

  8. 1/8 tsp. each Salt and pepper

  1. COOK vegetables in butter in large saucepan on medium heat 5 min. or until tender, stirring frequently. Add flour; mix well. Gradually add milk, stirring until well blended. Cook 3 to 5 min. or until thickened, stirring constantly.

  2. ADD cheese; cook on low heat 1 to 2 min. until melted, stirring frequently. Stir in beer.

  3. COOK until heated through. (Do not boil.) Stir in salt and pepper.
