  1. 4 serv ea 314 1/2 cal

  2. 4 g fat

  3. 4 boneless, skinless chicken breasts

  4. 2 egg whites, slightly beaten

  5. 2 c corn flakes, crushed

  6. Gravy:

  7. 4 T Flour

  8. 1 c chicken broth, defatted

  9. 1/2 c evaporated skim milk

  10. 1 c skim milk

  11. 2 t Molly McButter

  12. Salt & black pepper to taste

  13. Lightly pound chicken breasts with table knife handle until they are thinner, larger and lightly tenderized. Dip in egg white & roll in crushed corn flakes. In skillet sprayed with nonstick cooking spray, brown & cook over med-low heat 5-6 min on each side (will burn easily: keep heat fairly low). Turn only once. When chicken is done, remove from skillet.

  14. Add flour to skillet & brown over med heat, stirring occasionally. This will burn easily. Remove skillet from heat & set aside.

  15. In med bowl, combine remaining gravy ingredients. Using whisk, with skillet still removed from heat, add gravy liquid while stirring. Return to heat, whisk & stir until gravy thickens. Serve gravy spooned over chicken. Enjoy! You'll think you've died and gone to heaven! (Actually part of the recipe)
