  1. 2 cups sugar

  2. 3/4 cup margarine (Earth Balance Soy Free)

  3. 1 1/2 cups boiling water

  4. 2 1/4 cups flour

  5. 1/2 cup cocoa

  6. 2 teaspoons baking soda

  7. 1 tablespoon Ener-G Egg Substitute

  8. 4 tablespoons water

  9. 1 teaspoon vanilla

  1. Preheat oven to 350 degrees.

  2. Combine the flour, cocoa, and baking soda. Set aside.

  3. In a large mixing bowl, cream together the sugar and margarine.

  4. Add the boiling water and mix for 1 minute.

  5. Combine the egg substitute powder and 4 tablespoons water and mix for 1 minute.

  6. Add the vanilla and mix 1 minute more.

  7. Pour into a 10x13" glass baking pan.

  8. Bake 35 minutes or until a toothpick comes out clean.
