  1. 2 lbs 908g / 32oz Pork butt - coarsely ground

  2. 1/4 lb 113g / 4oz Pork fat - coarsely ground

  3. 3 tablespoons 45ml Chopped fresh parsley

  4. 3 Garlic - crushed

  5. 1 teaspoon 5ml Salt

  6. 1/4 teaspoon 1 1/3ml Freshly ground black pepper

  7. 4 tablespoons 60ml Dry white wine

  8. 1/2 cup 73g / 2.6oz Freshly grated parmesan cheese

  1. Put all the ingredients together, and mix them well. Let an hour and mix again. Stuff into casings.
