  2. 1 medium eggplant

  3. 3/4 cup soft breadcrumbs

  4. 2 tablespoons butter

  5. 2 tablespoons flour

  6. 1 cup milk, at room temperature

  7. 2 teaspoons grated onion

  8. 1 tablespoon catsup

  9. 1 teaspoon salt

  10. 1/2 teaspoon pepper

  11. Dash of cayenne

  12. 1/2 teaspoon Worcestershire sauce

  13. 6 ounces American or Cheddar cheese, cut into small pieces

  14. 2 eggs, slightly beaten, at room temperature

  1. Preheat oven to 350 degrees F.

  2. Butter a 1 1/2 quart casserole dish.

  3. Peel and dice eggplant.

  4. Steam or saute until tender.

  5. Toss with breadcrumbs in a large bowl.

  6. Melt butter in a medium saucepan.

  7. Stir in flour.

  8. Add milk.

  9. Cook and stir until thickened.

  10. Stir in onion, catsup and seasonings.

  11. Add cheese.

  12. Cook and stir until melted.

  13. Add eggs to sauce, stirring constantly.

  14. Combine sauce with eggplant mixture.

  15. Transfer to prepared dish.

  16. Bake 45 minutes.
