  1. 112 g thinly sliced Swiss cheese

  2. 7 slices bacon

  3. 8 large eggs, beaten to blend

  4. 1 cup milk

  5. 1/4 tsp. salt

  6. 1/4 tsp. pepper

  7. 1 tbsp. chopped fresh Italian parsley leaves

  1. Preheat oven to 350 degrees. Lightly butter the inside of a 9 inch round baking dish. Place the Swiss cheese slices in the bottom of the prepared dish. Cook bacon in a large skillet over medium heat until browned but still flexible. Drain bacon on paper towels. Whisk together the eggs, milk, salt, pepper and parsley in a large bowl. Chop bacon and stir into the egg mixture. Pour the omelet mixture over the Swiss cheese. Bake 30 minutes. Let omelet cool 5 minutes before slicing and serving.
