  1. 3 lbs 1362g / 48oz White potatoes

  2. 1/2 cup 31g / 1.1oz Chopped yellow onions

  3. 1/4 cup 23g / 0.8oz Finely minced garlic

  4. 1/2 teaspoon 2 1/2ml Salt

  5. 1/2 teaspoon 2 1/2ml Pepper

  6. 1/2 teaspoon 2 1/2ml Dry oregano

  7. 1/2 teaspoon 2 1/2ml Basil

  8. 1 cup 237ml Fresh lemon juice

  9. 1/2 cup 118ml Vegetable oil

  10. Water - (as needed)

  1. Preheat the oven to 400F.

  2. In a large baking pan place the peeled and quartered potatoes (add enough potatoes so that they fill the pan up, 3/4-inch from the top). Sprinkle on the onions, garlic, salt, pepper, oregano, basil, lemon juice, and vegetable oil. Add enough water so that the potatoes are just covered. Stir the ingredients together very thoroughly so that everything is well mixed.

  3. Bake the potato mixture for 45 minutes. Carefully stir the ingredients together so that they are re-mixed. Bake the potatoes for another 45 minutes, or until they are tender. Remove the potatoes with a slotted spoon.
