  4. 3-4 turkey necks

  5. 1 onion

  6. 1 rib celery

  7. 1 carrot

  8. 1/3 cup Marsala wine, or white wine

  9. 2 quarts cold water

  10. 2 garlic cloves

  11. 1 bay leaf

  12. For the sauce:

  13. 1/4 cup butter

  14. 1/4 oz dried porcini mushrooms

  15. 3 tbsp flour

  16. about 6 cups of the reserved turkey neck stock

  17. 2 tbsp heavy cream

  18. salt and pepper to taste
