  1. 3/4 cup rice vinegar

  2. 1/4 cup firmly packed light brown sugar

  3. 1/4 cup low-sodium soy sauce or tamari

  4. 2 tablespoons creamy peanut butter

  5. 1 tablespoon peeled and minced fresh ginger

  6. 1/4 teaspoon dried crushed red pepper

  7. 2 garlic cloves, minced

  8. 1/2 Basic Pizza Dough or 1 uncooked prepared pizza crust

  9. 1 tablespoon extra virgin olive oil

  10. 1 cup shredded grilled or rotisserie chicken

  11. 1/2 cup (2 ounces) shredded Swiss cheese

  12. 1/2 cup (2 ounces) grated Parmesan cheese

  13. 3 green onions, chopped

  14. 1/4 cup fresh cilantro leaves

  1. Preheat oven to 450°. (For a crispy crust, preheat a pizza stone on the lowest rack in the oven.)

  2. Combine first 7 ingredients in a skillet over medium-high heat. Bring to a boil, reduce heat, and simmer, stirring often, 5 minutes or until thickened and reduced (Mixture should be thick like pizza sauce.)

  3. Roll dough to 1/4-inch thickness on a floured baking sheet or pizza peel. Brush edges of crust with olive oil. Spread sauce to edges of crust; top with chicken and cheeses.

  4. If desired, transfer pizza to pizza stone dusted with cornmeal or semolina flour; bake 10 to 12 minutes. Remove from oven; sprinkle with green onions and cilantro.
