  1. 1/2 kg small fresh brinjals slit into 4 to fill the mixture.

  2. For the filling:

  3. 1 big bunch coriander leaves shredded

  4. 1-2 tbsp dhania powder

  5. 1 tbsp chilli powder

  6. 1-2 tbsp ginger-chilli paste

  7. 3-4 pods garlic crushed

  8. 1/4 tsp haldi

  9. hing a pinch

  10. salt as per taste

  11. 1 spoon oil

  1. Mix all the above and fill the brinjals.

  2. In a non stick pan, pour some oil and drop the brinjals in them.

  3. Cover with a lid and let it simmer for 15-20 mins. Keep stirring occasionally. When almost done add remaining masala if any and pour a bit of water.
