  2. 1 small green pepper, chopped

  3. 2 teaspoons olive oil

  4. 2 garlic cloves, minced

  5. 1 can (15 ounces) tomato sauce

  6. 2 medium tomatoes, chopped

  7. 1 can (2-1/4 ounces) sliced ripe olives, drained

  8. 1/2 teaspoon ground cumin

  9. 1/4 teaspoon hot pepper sauce

  10. 1/8 teaspoon pepper

  11. 4 cod fillets (6 ounces each )

  1. Southwest-Style Cod Recipe photo by Taste of Home In a large skillet, saute onion and green pepper in oil until tender. Add garlic; saute 1 minute longer. Stir in the tomato sauce, tomatoes, olives, cumin, pepper sauce and pepper. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes.

  2. Add fillets. Cover and cook over medium heat for 10-14 minutes or until fish flakes easily with a fork, turning once. Yield: 4 servings.
