  1. Apples 500 gms.

  2. Sugar 3 tbsps.

  3. Eggs, separated 2 nos.

  4. Sugar 2 tbsps.

  5. Milk 500 ml.

  6. Vanilla essence 1/2 tsp.

  7. Fresh cream 2 tbsps.

  8. Gelatin, for soft souffle or 15 gms.

  9. gelatin for firm souffle 25 gms.

  10. Water 1/4 cup

  11. Red food colouring As required

  12. Mint leaves For decoration

  1. Peel and core the apples, add a little water and cook till the apples are soft 2.Add the sugar and cook till dry, then add a few drops of food colouring and mix well, lastly puree the apples 3.Line a pudding bowl with a wet muslin and line this with the apple puree and place in the refrigerator 4.Beat the egg yolks with sugar until fluffy 5.Heat milk and pour in the egg yolk mixture and cook on a slow flame till the mixture thickens a little 6.Remove from the heat and allow to cool and add cream and vanilla essence 7.Melt the gelatin in 0.25 cup water over a low heat, cool and then add it to the milk mixture 8.Beat the egg whites till stiff and fold into the souffle mixture 9.Pour the souffle mixture into the lined apple puree bowl and set till firm 10.Turn out, place a plate over the pudding bowl and turn upside down 11.Carefully remove the bowl and then the muslin and decorate with a mint sprig.
