  1. 1 1/2 cups Cold Milk

  2. 1× 3-oz pkg Vanilla Pudding Mix

  3. 1/2 tsp Ground Cinnamon

  4. 1/4 tsp Ground Ginger

  5. 1/2 cup Canned Pumpkin

  6. 1 tsp Vanilla Extract

  7. 1 cup Whipped Cream -

  8. 1 cup Water

  9. 1 One-inch Piece Fresh Ginger , sliced

  10. 2 Tbsp Brown Sugar

  11. 1 Vanilla Bean , split

  12. 1 Star Anise

  13. 2 Firm Pears , such as bosc or anjou, peeled, cored and cut into thin wedges

  1. Whisk together milk and pudding mix for 2 minutes in a large bowl. Let stand for 2 minutes, then stir in spices. Gently combine the pumpkin, pudding and vanilla. Fold in whipped cream. Place in serving bowl; chill in refrigerator.

  2. Bring the water, ginger, brown sugar, split vanilla bean and star anise to a boil over medium-high heat. Add the pear wedges; when the liquid returns to a boil, reduce heat to medium-low. Simmer for 10-12 minutes, or until pear slices are poached. Using a slotted spoon, remove pears from pot; cool and place on top of mousse.
