  1. 1 tsp extra virgin olive oil

  2. 1 kg (2 1/4 lb) piece boneless beef chuck, about 7 1/2 cm (3 in) thick, trimmed of fat and tied

  3. 2 large onions, finely chopped

  4. 1 celery stick, finely chopped

  5. 3 garlic cloves, crushed

  6. 250ml (8 fl oz) dry red or white wine

  7. 1 tin chopped tomatoes

  8. 1 large carrot, grated

  9. 1 tsp chopped fresh thyme

  10. 450ml (3/4 pint) beef stock

  11. 600g (1 lb 5 oz) new potatoes, scrubbed and quartered

  12. 1 celeriac, peeled and cut into 1 swede, peeled and cut into 2 1/2 cm (1 in) cubes

  13. 4 carrots, sliced

  14. salt and pepper

  15. 3 tbsp chopped parsley to garnish

  1. Preheat the oven to 160ºC (325ºF, gas mark 3). Heat the oil in a large flameproof casserole. Add the beef and brown it over a moderately high heat for 6–8 minutes or until it is well coloured on all sides. Remove the meat to a plate.

  2. Reduce the heat to moderate. Add the onions, celery and garlic and cook, stirring frequently, for 3 minutes or until the onions begin to soften. Add the wine and let it bubble for about 1 minute, then add the tomatoes with their juice and the grated carrot. Cook for a further 2 minutes.

  3. Return the beef to the casserole together with any juices that have collected on the plate and the chopped thyme. Tuck a piece of greaseproof paper or foil around the top of the meat, turning back the corners so that it doesn't touch the liquid, then cover with a tight-fitting lid. Transfer the casserole to the oven and cook for 2½ hours.

  4. About 20 minutes before the end of the cooking time, bring the stock to the boil in a deep saucepan with a lid. Add the potatoes, celeriac, swede and sliced carrots. Cover and simmer gently for 12–15 minutes or until they are starting to become tender.

  5. Meanwhile, remove the beef from the casserole and set aside. Remove any fat from the cooking liquid, either by spooning it off or by using a bulb baster, then purée the casseroled vegetables and liquid in a blender or food processor until smooth. Season to taste.

  6. Drain the potatoes and other root vegetables, reserving the liquid. Make a layer of the vegetables in the casserole, put the beef on top and add the remaining root vegetables and their cooking liquid. Pour over the sauce. Cover the casserole and return to the oven to cook for 20 minutes or until the root vegetables are tender.

  7. Remove the beef to a carving board, cover and leave to rest for 10 minutes. Keep the vegetables and sauce in the oven turned down to low.

  8. Carve the beef and arrange on warmed plates with the vegetables and sauce. Sprinkle with the parsley and serve immediately.
