  1. 1 teaspoon sesame seeds black, toasted, crushed

  2. 1 teaspoon peanut oil or sesame

  3. 1/4 cup rice vinegar

  4. 1 tablespoon soy sauce, tamari

  5. 2 teaspoons honey

  6. 1 each garlic clove

  7. 1 tablespoon cilantro fresh, minced

  8. 1/4 teaspoon red pepper flakes

  9. 1/4 pound tofu thinly sliced

  10. 1/2 cup mushrooms, shitake fresh

  11. 1 small sweet red bell pepper sliced into thin strips

  12. 1 cup sugar snap peas fresh, or snow peas

  13. 1/2 cup scallions, spring or green onions

  14. 1/2 pound spinach fresh, washed

  1. To make dressing, combine sesame seeds, oil, vinegar, tamari, honey, garlic, cilantro and red pepper flakes in a medium bowl, stirring until well-mixed.

  2. Add tofu, shiitake, red bell pepper, snow peas and green onions.

  3. Toss with dressing until coated. Let marinate in refrigerator 30 minutes.

  4. Divide spinach between four plates.

  5. Top with marinated tofu and vegetables and serve.
