  1. 1 tablespoon sesame oil

  2. 2 cups diced onions

  3. 4 garlic cloves

  4. 1 1/2 cups brown rice

  5. 1 1/2 cups lentils

  6. 2 tablespoons fennel seeds

  7. 1 tablespoon coriander

  8. 1 teaspoon curry powder

  9. 1 teaspoon pepper

  10. 1 teaspoon cinnamon

  11. 1 teaspoon nutmeg

  12. 1 teaspoon turmeric

  13. 1 teaspoon allspice

  14. 2 teaspoons ginger

  15. 6 cups water

  16. 6 vegetable bouillon cubes

  17. 3 bay leaves

  18. 1 tablespoon orange zest

  19. 1/2 cup pistachios

  20. 1/2 cup golden raisin

  21. 3 cups frozen peas, thawed

  1. pour oil into a heavy, wide pan with a tight-fitting lid. Add onion, garlic and salt. Sweat until aromatic, stirring constantly.

  2. Add rice and stir to coat. Continue stirring until rice smells nutty.

  3. Add water,bouillon cubes, orange zest, spices and bay leaf. Bring to a boil, reduce heat, cover and simmer for 20-25 minutes. Remove from heat and let stand 5 to 10 minutes.

  4. Thaw the peas in a microwave. Stir in peas, and fluff with a fork. Sprinkle with raisins and pistachios.
