  1. 2 tablespoons sherry vinegar

  2. 1 teaspoon fresh chopped rosemary

  3. 3 egg yolks

  4. 1 cup virgin olive oil

  5. salt , pepper to taste

  1. Preheat oven to 250C.

  2. Coat 3 whole heads of garlic with 1 tablespoon of olive oil and season with some sea salt and black pepper. Wrap with aluminium foil and place on a baking sheet and roast in oven for 20-25 minutes or until soft.

  3. Remove from oven and cool. When cooled, remove from foil and squeeze out all the garlic cloves into a bowl.

  4. Place the cooled roasted garlic cloves, vinegar, rosemary and yolks into a blender and puree till smooth. With blender still going, slowly drizzle in the olive oil until all added and emulsified.
