  1. Broth

  2. 1 each onion minced

  3. 1 clove garlic minced

  4. 2 tablespoons vegetable oil

  5. 4 ounces tomato sauce

  6. 3 quarts beef stock prefer veal stock if possible

  7. Albondigas

  8. 3/4 pound ground beef

  9. 3/4 pound ground pork

  10. 1/3 cup rice raw

  11. 1 1/2 teaspoons salt

  12. 1/4 teaspoon black pepper

  13. 1 each egg slightly beaten

  14. 1 tablespoon mint leaves chopped

  1. Wilt onion and garlic in oil; add tomato sauce and beef stock.

  2. Heat to boiling point.

  3. Mix meat with rice, egg, mint, salt and pepper; shape into little balls.

  4. Drop into boiling broth.

  5. Cover tightly and cook 30 minutes.

  6. Will freeze nicely.
