  1. 1 tablespoon olive oil

  2. 4 rashers bacon, cut into thick strips

  3. 1 red onion, chopped

  4. 2 cloves garlic, crushed

  5. 3 medium red-skinned potatoes, unpeeled, diced

  6. 1 litre chicken stock

  7. 80g baby spinach

  1. Heat oil in a saucepan over moderate heat. Add bacon and cook until crisp. Remove to paper towels to drain.

  2. Add onion and garlic to pan and cook, stirring, until golden. Add potatoes and stock and bring to the boil. Reduce heat and simmer 8-10 minutes until potatoes are tender.

  3. Add spinach and allow to wilt. Return bacon to pan. Season to taste with black pepper.
