  1. 2 T Hungarian paprika (HOT)

  2. 1 T cayenne pepper

  3. 1 T black pepper

  4. 1 T granulated garlic

  5. 2 t dry mustard

  6. 1 t roasted / ground cumin

  7. 1/2 tsp thyme

  8. 1/2 tsp oregano

  9. 1 1/2 T kosher or sea salt

  10. 1 T cajun or creole seasoning

  11. 3 T cayenne pepper sauce (like Lousiana hot sauce )

  12. 1 T worchestersire sauce

  13. 1/4 C cider vinegar

  14. 12 oz chicken stock

  15. 12 oz beer ( a bit more to drink, if you like...)

  1. Place dry ingredients in a clean coffee grinder, and grind until very fine.

  2. Place liquid ingredients into a small saucepan and add the ground ingredients. Bring to a boil. After it boils, remove from heat and let it cool completely.

  3. Using a syring or with a large needle, inject the turkey every inch or so (especially into the breast meat). Do so 24 hours before cooking.

  4. After 24 hours, you can prepare the turkey however you like; deep fry, smoke, roast, etc...
