  1. light oil, for stir frying

  2. 10 green prawns, peeled and deviened

  3. 2 calamari hoods, cut into strips

  4. 3 chicken thigh fillets, cut into strips

  5. 200g Eye fillet of beef, cut into thin strips

  6. 1 large carrot, peeled and cut into small chunks

  7. Chinese Cabbage, shredded

  8. 1 head of broccoli, cut into small florets

  9. 1 packet bean sprouts

  10. 500g fresh egg noodles (cooked in boiling water for 5 minutes)

  11. 100g Asian Barbecued pork, sliced

  12. 2 litres stock, boiling

  13. fresh coriander

  14. fresh basil

  15. fresh Vietnamese Mint

  1. Heat 2 tablespoons of oil in a large wok and stir fry all the seafood for 3-4 minutes, remove from the wok. Stir fry the chicken and beef for 3-4 minutes remove from the wok. Stir fry the vegetables and remove from the wok.

  2. Cook the noodles in a pot of boiling water, distribute into each soup bowl.

  3. Place the cooked seafood, meats and vegetables over the noodles and ladle over the hot stock. Garnish with fresh herbs and serve immediately.

  4. Serves 6 generously.
