  1. 1 lb chuck roast, cut into 1/2-inch size pieces

  2. 2 tablespoons olive oil

  3. 3 garlic cloves , minced

  4. 1 teaspoon ginger , crushed

  5. 1/4 cup diced red onion

  6. 1 jalapeno, diced

  7. 1 teaspoon chili powder

  8. sri lankan curry powder

  9. 1/2 teaspoon turmeric powder

  10. 1 teaspoon ground black pepper

  11. 2 teaspoons salt

  12. 1/2 teaspoon tamarind paste

  13. 1/2 cup coconut milk

  14. 1/2 cup water

  1. Mix meat, salt tamarind, curry powder, turmeric, chili powder and black pepper.

  2. Heat oil in a dutch oven and fry onions and jalapeno until onion is golden color.

  3. Add garlic and ginger.

  4. Add the meat and mix well, keep cooking for about 2 more minutes.

  5. Add the coconut milk and water and cook at medium heat for about 1/2 hours.

  6. Serve with white rice.
