  1. 118 1/59 ml all-purpose flour

  2. 907.18 g boneless beef chuck steaks or 907.18 g roast, cut into 3/8 inch cubes

  3. 118 1/59 ml extra virgin olive oil

  4. 6 garlic cloves , finely chopped

  5. 2 large onions , chopped small

  6. 3 (57 fluid ounce) can red kidney beans , including liquid

  7. 3 (57 fluid ounce) can plum tomatoes , crushed, include liquid

  8. 155.92 g can tomato paste

  9. 10 fluid ounce can beef broth

  10. 10 fluid ounce can mushroom stems and pieces , include liquid

  11. 44 1/37 ml ground chili powder

  12. 9.85 ml ground cumin

  13. 14.79 ml granulated sugar

  14. 4.92 ml granulated garlic powder

  15. 4.92 ml italian seasoning

  16. 2.46 ml ground cayenne pepper

  17. 4.92 ml dried oregano leaves

  18. 2.46 ml fresh ground black pepper

  19. 4.92 ml salt

  20. 1 large sweet red pepper, seeded and diced

  21. 1 large green pepper , seeded and diced

  22. 2 large celery ribs , chopped small

  23. 12 fluid ounce can beer , of your choice

  24. 236 1/29 ml dry red wine , of your choice

  25. 19.71 ml tapioca starch or 19.71 ml cornstarch

  26. 59.14 ml cold water

  27. 354.88 ml grated sharp cheddar cheese

  28. 236 1/29 ml finely chopped onions or 236 1/29 ml chopped green onion

  1. Cut rib steaks or roast into 3/8" cubes.

  2. Place into a large bowl and sprinkle with flour, mixing well to coat.

  3. In a large frying pan, heat olive oil on medium high heat.

  4. Add coated meat cubes and fry until lightly browned, about 5 minutes, stirring frequently.

  5. Transfer meat cubes to a large cooking pot.

  6. Add chopped garlic, chopped onions, red kidney beans including liquid, plum tomatoes including liquid, tomato paste, beef broth, mushrooms including liquid, chili powder, ground cumin, sugar, Italian seasoning, cayenne pepper, dried oregano leaves, black pepper, salt, sweet red pepper, green pepper and celery and simmer covered, for at least 1 1/2 hours, stirring occasionally.

  7. Add beer and red wine and continue to simmer covered, for 15 minutes.

  8. At this time, adjust seasonings to taste.

  9. In a small bowl, mix together tapioca starch with 1/4 cup of water.

  10. While chili is simmering add tapioca mixture to thicken slightly.

  11. When serving, add some grated sharp cheddar cheese and finely chopped onions for garnish.

  12. You can substitute and use 2 pounds of lean ground round instead of chuck steaks.

  13. Dredge ground round in flour and fry until lightly browned.

  14. Continue with the recipe.
