  1. 1 large yellow onion

  2. 2 each garlic cloves crushed

  3. 1 cup water

  4. 2 each carrot scrubbed, sliced

  5. 1 large green bell pepper

  6. 1 each celery stalk sliced

  7. 1 tablespoon curry powder

  8. 1 teaspoon coriander ground

  9. 1 teaspoon turmeric

  10. 1 teaspoon cumin ground

  11. 1/4 teaspoon dry mustard

  12. 1/4 teaspoon red pepper flakes crushed

  13. 2 large potato peeled, chunked

  14. 3 cups water

  15. 2 cups cauliflower florets

  16. 8 each mushrooms fresh, cleaned, sliced

  17. 1/2 cup green peas frozen

  1. Saute the onion and garlic in the 1 cup water until translucent.

  2. Add the carrots, green pepper, and celery.

  3. Add the seasonings and cook and stir about 10 minutes, adding more water if necessary to keep from sticking.

  4. Add the potatoes and the 3 cups water.

  5. Cover and cook for 15 minutes.

  6. Add the cauliflower and cook 15 minutes more.

  7. Add the mushrooms and peas and cook 10 minutes longer.
