  1. 1/2 pound of fresh ready-to-eat shrimp

  2. salt, to taste

  3. pepper, to taste

  4. 4 tbsp of Smart Balance® Cooking Oil

  5. 3 cloves of garlic

  6. 1 inch ginger root, peeled and sliced

  7. 5 cups of chopped stir fry vegetables (green pepper, red pepper, peas, onions, asparagus, broccoli)

  8. 1/3 cup raw coconut aminos

  9. 1/4 cup Smart Balance® Rich Roast Creamy Peanut Butter

  10. cilantro (garnish)

  11. chopped peanuts, unsalted

  1. Season the shrimp in a small bowl with the salt and pepper.

  2. Add 2 tbsp Smart Balance® Cooking Oil to your wok pan; bring to a medium heat.

  3. Add in the garlic, ginger and shrimp; cook for 2 minutes. (Be sure not to overcook the shrimp; you are really only warming them with the flavors.)

  4. Remove shrimp from the wok and set aside.

  5. Add the last 2 tablespoon of cooking oil and the vegetables. Cook for 4 to 5 minutes.

  6. Mix the coconut aminos and peanut butter into the wok with the vegetables.

  7. Cook while mixing, until the peanut butter melts creating a sauce with the aminos.

  8. Add the shrimp back to the wok pan and stir together with the sauce and vegetables for 1 minute, and remove from heat.

  9. Finely chop the unsalted peanuts. Plate the stir-fry and garnish the dish with a few cilantro leaves and chopped peanuts.

  10. Serve warm.
