  1. 2 lbs 908g / 32oz Trimmed venison loin or Trimmed ham sections

  2. Salt - to taste

  3. Freshly-ground black pepper - to taste

  4. 2 tablespoons 30ml Olive oil

  5. 1/2 tablespoon 7 1/2ml Red onion - chopped (medium)

  6. 1 Bell pepper - sliced

  7. 3 Garlic cloves - minced

  8. 1/2 cup 118ml Chicken broth

  9. 2 tablespoons 30ml Hoisin sauce

  10. 1 tablespoon 15ml Asian chili-garlic paste

  11. 2 tablespoons 30ml Creamy peanut butter

  12. 4 cups 640g / 22oz Warm cooked white rice

  1. Season meat with salt and pepper. Heat oil in a large skillet over medium-high heat. Add deer and brown evenly until meat is rare. Remove meat from skillet.

  2. Add next 3 ingredients and saute for 2 minutes. Stir in remaining ingredients and cook while stirring until smooth, about 2 minutes more. Reduce heat to low.

  3. Slice meat across the "grain" into 1/2-inch thick medallions. Return sliced meat to pan and heat through, but not beyond medium-rare. Serve with steamed rice.

  4. This recipe yields 4 servings.
