  1. 8 chat potatoes, halved

  2. 2 tablespoons oil

  3. 4 pork loin steaks

  4. 2 tablespoons pesto

  5. 4 slices prosciutto

  6. cup small basil leaves

  7. Salad to serve

  1. Preheat oven to hot, 200°C. Line an oven tray with baking paper.

  2. Place potatoes in a small baking dish and toss with oil. Season to taste. Bake for 35-40 minutes, until golden and tender.

  3. Meanwhile, cut a small pocket in each pork steak. Fill pocket with pesto and spread a little over steak surface. Wrap prosciutto around each pork steak.

  4. Bake for 12-15 minutes, until cooked to taste. Serve pork and potatoes sprinkled with basil leaves and accompanied with salad or vegetables.

  5. Top tips The pork steaks can be pan fried rather than baked.

  6. For extra flavour, drizzle potatoes with apple cider vinegar after baking and drizzle pork with balsamic glaze or honey.
