  1. Directions Cut carrots, beans, potatoes into dices, cauliflower into small flowerettes.

  2. Blanch the vegetables and salt.

  3. Chop onion, puree the tomato, chop ginger, garlic, green chillies, green coriander.

  4. Cooking – heat oil, add cumin, when crackles, add garlic, stir fry to a golden brown colour.add onion, stir fry to a light brown colour.

  5. Add ginger paste, garlic paste, along with the powdered spices.

  6. Bring to boil, simmer for a minute. Add tomato, bring to a boil. Simmer until oil leaves the masala. Add vegetables, mix bring to a boil, simmer until, vegetables are cooked.

  7. Adjust seasoning. Add ginger, green chillies, green coriander.

  8. Consistency – pouring.
