  1. 600g pork mince

  2. 100g creamy feta, finely crumbled

  3. 1/2 cup chopped flat-leaf parsley

  4. 1/2 cup soft breadcrumbs

  5. 2 teaspoons fennel seeds, bruised

  6. 1 clove garlic, crushed

  7. Olive oil spray

  8. 4 wholemeal or multigrain seed rolls, split, toasted

  9. Butter lettuce leaves and thin red onion rings, to serve

  10. 1/2 cup (80g) bottled char-grilled red capsicum strips in oil, drained

  1. Place the pork, feta, parsley, breadcrumbs, fennel and garlic in a bowl. Season with salt and black pepper; mix thoroughly to combine. Shape mixture into 4 thick patties. Cover; chill for 30 minutes.

  2. Preheat your barbecue or char-grill to moderate. Lightly spray the burgers with oil. Cook for 4-5 minutes each side or until tender. Stack patties over lettuce and onion on rolls and top with strips of capsicum.
