  2. all-purpose potatoes , peeled and cut into 1-inch chunks

  4. 1/4 teaspoon(s) ground black pepper

  7. 1/2 cup(s) milk , warmed

  8. 3 tablespoon(s) chopped fresh chives

  1. In 4-quart saucepan, heat potatoes and enough water to cover to boiling over high heat. Reduce heat to low; cover and simmer 15 minutes or until potatoes are fork-tender; drain.

  2. Return potatoes to saucepan. With potato masher, mash potatoes with salt and pepper. Add sour cream, warmed milk, and all but 1 teaspoon chopped chives; mash until mixture is well blended. Sprinkle with remaining chives to serve.

  3. Tips & Techniques Potatoes can be peeled and cut ahead of time without discoloring by keeping them submerged in a bowl of cold water for up to 6 hours.
