  5. 1 tablespoon galanga root minced

  7. 1 1/2 tablespoons garlic minced

  8. 2 tablespoons coriander seeds ground

  9. 1 tablespoon curry powder yellow

  10. 1 tablespoon kaffir lime leaves chopped

  11. 2 1/2 tablespoons sugar

  12. 1/2 teaspoon salt

  13. Peanut sauce

  14. 7 each chilies dried, soaked until soft

  15. 1 1/2 teaspoons galanga root minced

  16. 2 tablespoons cilantro root minced

  17. 1 1/2 tablespoons lemon grass chopped

  18. 2 1/2 tablespoons garlic minced

  19. 3 1/2 tablespoons red onions chopped

  20. 1 teaspoon coriander seeds ground

  21. 1 1/2 teaspoons shrimp paste

  22. 5 cups coconut milk

  23. 1/3 cup peanut butter

  24. 1/4 cup sugar

  25. 3 1/2 teaspoons salt

  1. In a blender or food processor, grind the listed ingredients, from lemon grass to salt, finely.

  2. Mix with the meat (wear latex gloves to do this, it stains) and marinate for 1 hour.
