  1. For The Zucchini Spread (makes Approx. 3/4 Cup)

  2. 3/4 cup unpeeled and shredded zucchini

  3. 2 tbsp chopped parsley

  4. 1/2 tbsp lemon juice

  5. 1/4 tbsp olive oil

  6. 1/4 tsp crushed garlic (lehsun)

  7. 1/2 tsp green chilli paste

  8. salt and freshly ground black pepper powder to taste

  9. 1/2 tbsp chopped roasted walnuts (akhrot)

  10. For Serving

  11. 1 small whole wheat french bread loaf (cut into 8 slices)

  1. Squeeze the zucchini with hands to remove the excess water.

  2. Combine all the ingredients, except the walnuts, and blend in a mixer to a smooth paste.

  3. Transfer the paste to a bowl, add the walnuts and mix well.

  4. Cover and refrigerate for at least an hour.

  5. Divide the spread into 8 equal portions and keep aside.

  6. Just before serving, toast the bread slices in a sandwich griller till they are brown and crispy from both the sides.

  7. Apply a portion of the spread evenly over each bread slice.

  8. Serve immediately.
