  1. Hazelnut vinaigrette:

  2. 2 tablespoons white wine vinegar or red wine vinegar, or rice wine vinegar

  3. 1 tablespoon lemon juice fresh

  4. 2 tablespoons dijon mustard

  5. 1 clove garlic minced, or to taste

  6. 1/2 teaspoon salt or to taste

  7. 2 tablespoons olive oil, extra-virgin

  8. 4 tablespoons hazelnut oil

  9. Salad:

  10. 1 large apple Gala, unpeeled, cut into strips

  11. 1 medium celery root peeled, cut into matchstick-size strips

  12. 1 medium fennel bulb halved lengthwise, thinly sliced

  13. 1 x parmigiano cheese shaved, as needed*

  1. Hazelnut vinaigrette:

  2. Whisk wine vinegar, lemon juice, dijon mustard, garlic and salt in a small bowl.

  3. Whisk in olive oil and hazelnut oil.

  4. Salad:

  5. Combine apple, fennel, celery root a large bowl.

  6. Toss with vinaigrette.

  7. Top with Parmesan. Serve.
