  1. Cabbage 1 Small

  2. Butter/Margarine 4 Tablespoon

  3. Salt 1 Teaspoon

  4. Pepper 1/4 Teaspoon

  5. 4 cups prepared instant mashed potatoes

  6. 1 cup diced cooked pork

  7. Onions 1 Can (10oz)

  8. 4 hard-cooked eggs, diced

  9. Parsley 1/4 Cup (16 tbs) , chopped

  1. Directions GETTING READY 1) Preheat the oven to 400°F.

  2. Trim and shred the cabbage.

  3. MAKING 3) In a large saucepan, cook the cabbage in slightly salted water for 5 minutes, or until just tender.

  4. Drain well, toss with 2 tablespoons of the butter or margarine, salt and pepper.

  5. Fold the mashed potatoes into the cabbage, blend well.

  6. In a buttered shallow 8-cup baking dish, spoon the mixture over bottom and sides.

  7. In a small skillet, saute the pork in rest of the 2 tablespoons butter or margarine for 1 minute.

  8. Pour and stir in the gravy, allow to boil, then turn off the heat.

  9. Gently mix in the eggs and parsley, then spoon into the potato-lined dish.

  10. ) Bake in the preheated oven for 15 minutes, or until bubbly.

  11. SERVING 11) Serve immediately on individual serving plates.
