  1. finely grated rind and juice 2 limes

  2. 1 tablespoon chopped mint

  3. 1 tablespoon honey

  4. 1 tablespoon olive oil

  5. 1 teaspoon hot paprika

  6. 750g pork fillet, trimmed

  7. 1 tablespoon vegetable oil

  8. steamed baby carrots and green beans, to serve

  9. Citrus potato smash

  10. 1kg kipfler potatoes, scrubbed

  11. 30g butter, chopped

  12. finely grated rind and juice 1 orange

  13. finely grated rind and juice 1 lemon

  14. 1 teaspoon ground coriander

  15. 1 teaspoon ground cumin

  1. Combine rind, juice, mint, honey, oil, coriander, paprika and cumin in a large shallow dish. Add pork, turning to coat in the marinade. Cover and chill for 1 hour.

  2. Citrus potato smash . Cook potatoes in a large saucepan of boiling water for 10-12 minutes until tender. Drain and return to pan. Lightly mash potatoes with butter. Add half the rind, half the juice and half the spices. Cover to keep warm.

  3. Heat oil in a large frying pan on medium. Cook pork for 10-15 minutes until cooked to taste. Serve pork in slices with citrus potato smash, baby carrots and beans. Drizzle with combined remaining rind, juice and spices.

  4. Top tip Use a citrus zester to make fine, thin shreds of zest (the coloured outer skin of citrus fruit). Just pull the zester towards you across the skin. This can then be used in recipes or as a garnish.
