  1. 1 1/4 cups flour

  2. 1 cup wheat flour

  3. 2 tablespoons brown sugar

  4. 1 1/2 teaspoons baking powder

  5. 1 1/2 teaspoons baking soda

  6. 1 teaspoon cinnamon, ground

  7. 1 tablespoon ground nutmeg

  8. 1 tablespoon ginger

  9. 1/2 teaspoon ground cloves

  10. 1/2 teaspoon salt

  11. 2 cups 2% buttermilk

  12. 1/4 cup molasses

  13. 2 egg whites

  1. In a wide-mouth pitcher or large mixing bowl, combine the flours, brown sugar, baking powder, baking soda, cinnamon, nutmeg, ginger, cloves, and salt.

  2. In a small bowl, whisk together the buttermilk, molasses, and egg whites. Stir into the flour mix just until moistened.

  3. Coat a nonstick griddle or large skillet with nonstick spray and heat over medium heat. For each pancake, pour or ladle about 1/4 cup batter onto the hot griddle. Cook for 1-2 minutes, or until the pancakes are bubbly and slightly dry around the edges. Turn over and cook briefly until golden. Serve immediately.
