  1. 4 tablespoons butter, unsalted

  2. 1/4 cup almonds sliced

  3. 1/4 cup pistachio nuts slivered

  4. 6 large garlic cloves

  5. 1 each ginger one inch

  6. 1 teaspoon coriander

  7. 5 each cardamom pods green, husked

  8. 1 x green chili peppers fresh

  9. 1/4 teaspoon black peppercorns

  10. 5 each cloves whole

  11. 1/2 teaspoon cumin

  12. 1/4 teaspoon mace ground

  13. 1/4 cup water

  14. 3 each lamb rib chops trim off fat

  15. 1/2 cup water

  16. 1/2 teaspoon saffron threads dissolved in

  17. 2 tablespoons hot water

  18. 1 x salt optional

  19. 1/2 cup green peas fresh or frozen

  20. 2 tablespoons cilantro fresh, minced, or parsley*

  1. Heat 2 tablespoons of the butter in a heavy pan over medium-

  2. high heat.

  3. Add almonds and pistachios; cook, stirring, until light brown, about 4 minutes.

  4. Remove with a slotted spoon and set aside.

  5. Combine the garlic, ginger, coriander, cardamom, chili, peppercorns, cloves, cumin, mace and water in a blender and blend to form a smooth paste.

  6. Arrange lamb in a large shallow dish.

  7. Rub the spice mixture over both sides of lamb.

  8. Cover and refrigerate 30 minutes.

  9. Heat remaining 2 tablespoons butter in a large, heavy skillet over medium-high heat.

  10. Add lamb and brown well on both sides.

  11. Add 1/4 cup of the water and bring to a boil.

  12. Reduce heat, cover, and simmer for 5 minutes.

  13. Add remaining water; sprinkle in saffron.

  14. Cover and cook until lamb is tender, about 10 minutes.

  15. Taste, and add salt, if needed. Stir in peas and cook 5 minutes longer.

  16. Sauce should be very thick. Transfer lamb to a heated platter.

  17. Stir sauce and pour over lamb. Top with fried nuts and cilantro.
