  1. 1 clove garlic

  2. 1 cup loosely packed cilantro leaves

  3. 5 tablespoons olive oil

  4. juice of one lime

  5. 1/2 teaspoon salt

  6. 1 teaspoon freshly ground pepper

  7. 2 pounds salmon fillets skin on

  8. 1 large ripe tomato seeded and chopped

  1. Preheat oven to 400.

  2. Place garlic, cilantro, 2 tablespoons olive oil, lime juice, salt and pepper in a blender.

  3. Process until creamy.

  4. Brush a baking pan or sheet with remaining oil and place salmon in it.

  5. Spread cilantro mixture on the salmon and scatter tomato over it.

  6. Sprinkle with a little more salt and pepper.

  7. Bake uncovered for 15 minutes then serve immediately.
