  1. 1 head red cabbage , thinly sliced (I supplemented with some savoy)

  2. 1 medium onion , chopped

  3. 1 T. butter

  4. 1 T. olive oil

  5. 1/3 cup apple cider vinegar

  6. 1/3 cup balsamic vinegar

  7. 1/4 cup brown sugar

  8. 3 T. water

  9. 1 t. salt ,

  10. 1/4 t ground cloves

  11. 1/4 t. pepper ground

  12. 1/2 t. allspice

  13. 3/4 t. caraway seeds

  14. 1/2 t. celery seeds

  15. 1 apple (granny smith or macintosh or ?) I used macintosh chopped

  16. 2 pork chops trimmed, and cut into even pieces

  1. In a big saucepan heat the butter and oil. Throw in the onions and the cabbage cook on medium/low heat, stirring frequently so all the veggies get a turn or 2, on the bottom Cover, and simmer for about an hour when the volume is reduced. Now add the rest of the ingredients (except the pork) and continue to simmer, stirring every half hour. Cook until the cabbage is "tender". (about 2 hours.

  2. Place the pork pieces on top of the cabbage, and replace lid. continue to simmer for 2 1/2 hours --until meat is very tender.
