  1. 1/2 cup dulong. You may substitute shredded white fish meat.

  2. 1 tablespoon chopped shallots

  3. 1 tablespoon chopped onions

  4. 1/2 cup minced tomatoes

  5. 1/2 teaspoon fine ground black pepper

  6. 2 tablespoon flour or cornstarch

  7. 1 large egg

  8. 1/2 teaspoon minced garlic

  9. 1/2 teaspoon grated ginger

  10. 1/2 teaspoon minced green chili

  1. Tortang Dulong – Fried fish fry patties Place fish fry in a fine mesh colander or sieve and let the excess juices drip. Fish fry is saltier than regular fish meat. Letting the juices drip should reduce the salt content. You can also rinse it in cold water before placing in colander.

  2. Mix all ingredients in a bowl.

  3. Refrigerate for 10 minutes Heat oil in a skillet or non-stick pan.

  4. When oil is hot enough, put around 2 heaping tablespoons into middle of pan.

  5. Spread out the fish fry mix until it is around 6 cm / 3 inches in diameter.

  6. Cook until each side is well done and crispy.

  7. Once cooked, place patties in paper to reduce excess oil.

  8. You may add more minced tomatoes to the mix to adjust saltiness.

  9. Serve with spicy vinegar dipping sauce
