  1. 2 bunches of broccoli rabe

  2. 12 ounces orecchiette pasta

  3. Olive oil

  4. 1 lb spicy sausage , casings removed

  5. 3 garlic cloves, minced

  6. Pinch dried red pepper flakes

  7. Freshly grated Parmesan cheese

  8. Salt

  9. Pepper to taste

  1. Bring a large pot of salted water to a boil. Add broccoli rabe and cook until crisp-tender, about 1-2 minutes. Strain broccoli rabe, reserving all the cooking liquid. Set the broccoli rabe aside. Cook the pasta in the same pot of boiling water until al dente, about 8 minutes. Drain, reserving 1 cup of liquid.

  2. In a large skillet, heat oil over medium heat. Add sausage and cook, breaking up with a spoon, until browned, about 8 minutes. Add the garlic and red pepper flakes, and sauté about 30 seconds. Add broccoli rabe, pasta, and reserved liquid, a little at a time, until moist. Add pepper to taste. Stir in Parmesan cheese.
