  1. 1 cup 237ml Softened oleo

  2. 2 cups 396g / 13oz Sugar

  3. 2 cups 396g / 13oz Eggs (large)

  4. 2 Unsweetened chocolate - (1 oz.) melted and Cooled

  5. 1 cup 237ml Plain mashed potatoes.

  6. 2 teaspoons 10ml Vanilla

  7. 2 cups 125g / 4.4oz Unsifted flour

  8. 2 teaspoons 10ml Baking powder

  9. 1 teaspoon 5ml Salt

  10. 1/2 cup 118ml Milk

  1. Preheat oven to 325F. Grease 13 x 9 inch pan.

  2. In large bowl on high speed, beat oleo until fluffy. Gradually beat in sugar until mixture is light. Add eggs, one at a time, beating well after each.

  3. Beat in chocolate, potatoes and vanilla. On a sheet of waxed paper, combine flour, baking powder and salt to potato mixture; add a quarter of the flour mixture and a third of milk; continue to alternate beating lightly until all flour mixture and milk have been added.

  4. Pour butter into prepared pan; bake 30 minutes or until cake tester inserted in center comes out clean. Cook cake in pan on wire rack. If desired, using fine sieve, sift confectioners sugar over cake before serving.
