  1. 3 cups flour

  2. 1 tbsp cinnamon

  3. 1 tsp allspice

  4. 1 tsp nutmeg

  5. 1 tsp baking soda

  6. 1/2 tsp salt

  7. 1 cup room temp butter

  8. 1/3 cup vegetable oil

  9. 2 cups sugar

  10. 3/4 cup apple cider

  11. 1 tsp vanilla

  12. 3 large eggs

  13. 3 large apples, peeled and diced

  14. 1 cup pecans Glaze:

  15. 2 cups powdered sugar

  16. 4 tbsp apple cider

  17. 1 tsp

  1. Preheat oven to 350. Prepare your bundt pan by spraying with a cooking spray and coating with flour. Sift together flour, spices, baking soda and salt. Set aside. In your kitchen aid mixer, whisk together sugar, eggs, oil and butter for 3-4 minutes. Switch to a paddle attachment, and add apple cider and vanilla. Fold dry ingredients into your wet ingredients. Slowly fold in apples and pecans. Pour into prepared bundt pan and bake for approximately 85 minutes, or until knife inserted comes out clean. Let cool in pan for about 10 minutes before inverting on your serving plate. Once you invert it onto your serving plate let it sit for at least an hour before topping with your cider glaze. To make the cider glaze: Combine all ingredients and pour over cake slowly. You may add extra pecans on top for an extra crunch!
