  3. 6 oz Bayonne ham (or Parma or Virginia Country ham )

  4. 1/2 cup olive oil

  5. 3 or 4 tomatoes , crushed

  6. 5 green peppers

  7. 4 cloves garlic

  8. 2 onions

  9. Salt and pepper

  10. Buy ingredients at the grocery and gourmet store

  1. Step 1: Cut the chicken into 10 to 12 pieces. Season with salt and pepper Step 2: Heat 1/4 cup of olive oil in a dutch oven. Put the chicken pieces and brown all sides over high heat. Cover and cook over moderate heat for 15 minutes.

  2. Step 3: Peel and seed the green peppers. Cut into large strips. Place the green peppers, ham and garlic in the dutch oven with the chicken. Cook for 20 minutes.

  3. Step 4: Peel and seed the tomatoes. Heat 1/4 cup of olive oil in a skillet. Put the onions and cook over moderate heat for 15 minutes. Add the tomatoes and cook 15 minutes more.

  4. Step 5: Adjust the seasoning and serve hot.

  5. Wine suggestion: Red Madiran, Saint Estphe, Provence ros, white Chablis, dry Vouvray ( French Wine Guide ).
