  1. 1 tablespoon 15ml Olive oil

  2. 1 lb 454g / 16oz Chicken breast, skinless, boneless - cut into 3/4" strips

  3. 1/4 teaspoon 1 1/3ml Salt

  4. 1/4 teaspoon 1 1/3ml Pepper

  5. 1 Garlic - minced

  6. 2 cups 125g / 4.4oz Purple onions - sliced

  7. 1 cup 237ml Red bell pepper - sliced

  8. 1 cup 237ml Mushrooms - sliced

  9. 1/2 teaspoon 2 1/2ml Dried thyme

  10. 1 Pizza dough - refrigerated kind

  11. Vegetable cooking spray

  12. 4 oz 113g Mozzarella cheese, part skim milk - shredded

  1. Heat oil in a skillet over medium-high heat. Add chicken and next 3 ingredients; saute 3 minute.

  2. Add onion and next 3 ingredients; saute 4 minutes or until chicken is done. Set aside.

  3. Unroll pizza dough, and pat into a 12-inch pizza pan coated with cooking spray.

  4. Sprinkle 1/2 cup cheese evenly over dough.

  5. Spoon chicken mixture over cheese, and top with remaining 1/2 cup of cheese. Bake at 425xF for 15 minutes or until crust is golden.
