  1. Meatballs

  2. 1 1/2 lbs 681g / 24oz Ground sirloin

  3. 1 lb 454g / 16oz Egg - beaten (large)

  4. 1 cup 146g / 5.1oz Italian bread crumbs

  5. 1 cup 62g / 2 1/5oz Onion - chopped fine (medium)

  6. 4 Garlic cloves - crushed, minced

  7. 2 teaspoons 10ml Worcestershire sauce

  8. 1/4 cup 10g / 0.4oz Chopped flat-leaf parsley leaves

  9. 1/4 cup 59ml Grated Parmigiano or Romano

  10. 5 Minute Marinara Sauce

  11. 2 tablespoons 30ml Extra-virgin olive oil

  12. 2 turns around the pan

  13. 4 Garlic cloves - crushed, chopped

  14. 1/2 teaspoon 2 1/2ml Crushed red pepper flakes

  15. 2 tablespoons 30ml Chopped flat-leaf parsley leaves

  16. 1/2 teaspoon 2 1/2ml Dried oregano

  17. 1 Crushed tomatoes - (28 oz)

  18. 1 Chunky style crushed tomatoes - (14 oz)

  19. Coarse salt - to taste

  20. Freshly-ground black pepper - to taste

  21. Subs

  22. 4 Semolina crusty sub rolls

  23. (with or without sesame seeds)

  24. 10 oz 284g Shredded provolone or Italian 4-cheese

  25. Blend Shredded basil (sweet) or Shredded arugula (spicy) leaves - for garnish

  1. Preheat oven to 450 degrees.

  2. Place ground sirloin in a large mixing bowl and punch a well into the center of meat. Fill well with the egg, bread crumbs, onion, garlic, red pepper flakes, Worcestershire, parsley, cheese, and a little salt and pepper. Mix up meatball ingredients until well combined, yet not over-mixed. Divide mix into 4 equal parts, roll each part into 4 balls and space equally onto a nonstick baking sheet. Place meatballs in oven and roast about 12 minutes. Break a meatball open and make sure meat is cooked through before removing from the oven.

  3. Heat a medium saucepan over medium heat. Add oil and garlic. When garlic starts sizzling, add herbs and crushed pepper. Allow oil to infuse for half a minute, then stir in the tomatoes and season sauce with salt and pepper. Bring sauce to a bubble, reduce heat, and simmer until meatballs are removed from oven.

  4. Combine meatballs and sauce and pile into sub rolls, 4 meatballs per sub. Top with shredded cheese and place subs under broiler to melt cheese. Top with shredded basil or arugula and serve with a pile of Oven Fries.
