  2. 2 1/4 cups all-purpose flour

  3. 1 1/2 cups sugar

  4. 1/2 cup unsweetened cocoa powder

  5. 1 teaspoon baking soda

  6. 1/4 teaspoon salt

  7. 3/4 cup buttermilk

  8. 1/2 cup unsweetened applesauce

  9. 1 tablespoon oil

  10. 1 teaspoon vanilla extract

  11. 4 egg whites

  12. 2 cups grated unpeeled zucchini

  13. 2/3 cup minichocolate chips

  14. 1/2 cup chopped walnuts

  1. Preheat the oven to 325 degrees F.

  2. Lightly coat a 9 x 13 inch baking pan with non stick vegetable oil spray.

  3. In a large bowl, combine the flour, sugar, cocoa, baking soda and salt.

  4. In a medium bowl, combine the buttermilk, applesauce, oil and vanilla.

  5. In another large bowl, beat the egg whites with an electric mixer on high speed for 1 minute.

  6. Add buttermilk mixture and beat until blended.

  7. Combine egg white mixture and flour mixture and beat until blended.

  8. Mix in the grated zucchini and 1/3 cup of the chocolate chips.

  9. Pour the batter into the prepared pan.

  10. Sprinkle the remaining chocolate chips and the nuts over the batter.

  11. Bake about 50 minutes or until a toothpick inserted near the center comes out clean.

  12. Let the cake cool completely, in a pan, on a wire rack.
