  1. 1 to 1 1/2 pound pork roast tenderloin

  2. 2 cups chicken stock

  3. 1/2 cup water

  4. 1 cup (or more) apricot preserves

  5. 3 to 4 pounds red potatoes , cleaned and quartered

  6. 1 large onion , finely chopped

  7. 3 to 4 carrots , peeled and sliced into 1/2" pieces

  8. 6 cloves garlic , smashed and chopped

  9. 1 tbsp fresh tarragon , minced (1 tsp dried, crumbled)

  10. 1 tbsp fresh basil , minced (1 tsp dried, crumbled)

  11. 1/2 tbsp rosemary , minced (1/2 tsp dried, crumbled)

  12. 1/8 tsp ground cayenne pepper

  13. 1/2 tsp black pepper

  14. salt to taste

  1. Combine all in large crockpot. Cook on high for 2 hours.

  2. Reduce heat to low. Continue cooking for 5 to 6 hours.

  3. Strain remaining liquids. They make a good gravy if so desired.
